Quick and colourful relish – perfect with cheese or as a meat accompaniment
Tomato Chilli Relish
Makes 1 small jar
Instructions

Add the tomatoes, chillies, vinegar, lemon juice and tomato puree together in a medium sized pan and boil together for 8-10 minutes until reduced. The mixture should be thick enough that when you run a spoon through it, a gap remains in the middle.
FOR THE TM: Add tomatoes and chillies to your TM bowl and chop 5 sec/speed 5. Add vinegar, lemon juice and tomato purée and cook 10 min/Varoma/speed 2 with the measuring cup off and the simmering basket on top. -
Add the sugar and some seasoning. Stir until the sugar dissolves, then boil rapidly for 5 minutes until thickened, stirring occasionally.
FOR THE TM: Add sugar and some seasoning and cook for 15 min/Varoma/speed 2 with the measuring cup off and the simmering basket on top. -
Pour into a sterilised jar, cover and leave to cool. It will keep for several weeks in the fridge.

I cut the skinned and deseeded tomatoes in half and also cut the chillies in half and it worked well. All stated TM settings worked perfectly. For seasoning I added 1/2 tsp salt. Delicious relish.

Could you freeze this – I want to make a bulk lot with a glut of tomatoes and afraid it won’t keep
This hasn’t been tested by our El Gusto testers, but it should work. Once defrosted, you may notice slight water separation—just give it a good stir.
