Instructions

  1. To skin tomatoes, cut the top off each tomato and cut a cross in the base. Bring a big saucepan of water to the boil and gently add the tomatoes. Bring just back to boil then remove tomatoes to a large bowl or sink of cold water. The skins will just rub off.

  2. Dice the tomatoes and mix with the celery, onions and salt. Allow to stand for 4 hours, then strain overnight.

  3. The next day, discard the strained juices. Tip the relish into a big bowl and add the sugar, vinegar, diced capsicum and 50g mustard seeds.

  4. Allow to sit for 1 hour then place in jars. Keep in fridge.

Note

As this is an uncooked relish, it needs to be kept refrigerated.
