Delicious!
Delicious and colorful salad! I cooked the spiralised beetroot slightly to soften. Ensure you add the pickled onion, and yes definitely double the dressing.
Delicious.
Love the way this can be prepared in stages ahead of time.
Didnt include the walnuts in the recipe and was still lovely.
I doubled the dressing too.
Really good and so impressive looking! Need to double the dressing and add more flavor: herbs, seasonings etc into the dressing.
Lovely salad. I found you only need half the volume of liquid for the pickled onion, or else do 2 onions. I packed the onion into a glass screw top jar & poured the vinegar mix over. It keeps in the fridge for several weeks like that.
Very colourful & tasty Salad!
Beautiful salad, definitely double dressing and served with pistachio instead of walnuts.
Looks great and lovely combo of ingredients!
Looks amazing, tastes better. My go to salad to brighten the table.
Definitely double the dressing.
Easy to have all prepared before hand then throw together at the last.
Leftovers keep well too if there’s any!
Lovely salad. Had plenty of comments and even asked for recipe later.
Delectable salad. Added blueberries too 🫐 for interest colour and flavour. Served this salad spilling out of the outer cabbage leaves like a bowl on its side.
Pomegranates are also a lovely addition instead of the craisens.
Very nice, got lots of comments, very bright too!
Definitely double dressing
How long do the picked onions keep in the fridge?
They will keep for at least a week.
Loved this! I used a bistro salad bag (spinach with grated beetroot) instead of grating the beetroot myself. Lovely colours
Beautiful salad! I’ve done it a few times now and always receives compliments. I left off the pickled onion as optional in a small bowl on the platter. Doubled the dressing as well.
Delicious. Double the dressing and this recipe is perfect.
Delicious. Double the dressing and thisbrecipe is perfect.
This is delicious….yes double dressing
This is such a bright salad! Would definitely make it again, guests commented too! Handy salad for make ahead! 🙂
Lovely salad! Very easy to do and I’ve had comments every time I’ve made it. I have used precooked beetroot, or alternatively use a salad leaf mix that includes spinach and beetroot… you don’t get quite as much beetroot as the recipe says but it cuts out another step in preparation!
Yes! Doubled the dressing and was delicious. Recipe for pickled onion lasted 2 lots of salad. Serve the feta in a small bowl on side of salad for DF option. Definitely on my “make again list”. I compiled cabbage, beet and cranberries day before, made dressing day before and then threw it all together before the meal.
lovely salad – I changed the walnuts to pistachios which worked v. well – added a slightly salty flavour
Also used cooked beetroot which worked fine too 🙂
Definitely double the dressing!
Can you use raw beetroot, or is this made with the pre cooked stuff?
This is made with raw beetroot.
Nice, but agree with others. The dressing needs to be doubled.
Yes defo needs more dressing. But looks v good and vibrant.
Love this. So bright! Leftovers tasted even better. I doubled the dressing too.
Looks good, tastes better.
I reckon the dressing needs to be doubled.
