Instructions

  1. Thinly slice red onion - you can either have the slices whole or halve the onion before slicing.

  2. In a medium-sized bowl, mix vinegar with sugar and toss in the red onion. Leave to marinate in the fridge for about 20 minutes.

  3. Transfer the onion in its juice to a jar and leave in fridge for up to 1 week.

Note

Not suitable to freeze.

    Yes, the best!! We always have a jar of this in our fridge. It lasts for weeks – if it doesn’t get eaten by then! So good on break trays, burgers, picnics, anything. Amazingly simple too!
