Pink Winter Slaw

Instructions

  1. For the dressing, place all the ingredients in a jar with a lid, and shake well to combine.

  2. For the pickled onions, heat the vinegar, water, sugar and salt in a small saucepan over medium heat. Stir until the sugar and salt have dissolved. Allow to cool for 5 minutes, then pour over the sliced onion. Set aside to cool to room temperature, then store in the fridge. 

  3. For the salad, in a large mixing bowl combine the cabbage, beetroot and spinach. Add half the herbs, feta, walnuts, pickled onions and craisins – reserving half for topping. Add the dressing and toss to combine, season to taste.

  4. To serve, top with remaining herbs, pickled onions, walnuts, feta and craisins.

Note

In summer months, craisins can be substituted with pomegranate to give it more freshness.

    Delicious and colorful salad! I cooked the spiralised beetroot slightly to soften. Ensure you add the pickled onion, and yes definitely double the dressing.

    Love the way this can be prepared in stages ahead of time.
    Didnt include the walnuts in the recipe and was still lovely.
    I doubled the dressing too.

    Really good and so impressive looking! Need to double the dressing and add more flavor: herbs, seasonings etc into the dressing.

    Lovely salad. I found you only need half the volume of liquid for the pickled onion, or else do 2 onions. I packed the onion into a glass screw top jar & poured the vinegar mix over. It keeps in the fridge for several weeks like that.

    Lovely salad! Very easy to do and I’ve had comments every time I’ve made it. I have used precooked beetroot, or alternatively use a salad leaf mix that includes spinach and beetroot… you don’t get quite as much beetroot as the recipe says but it cuts out another step in preparation!

    Yes! Doubled the dressing and was delicious. Recipe for pickled onion lasted 2 lots of salad. Serve the feta in a small bowl on side of salad for DF option. Definitely on my “make again list”. I compiled cabbage, beet and cranberries day before, made dressing day before and then threw it all together before the meal.

    lovely salad – I changed the walnuts to pistachios which worked v. well – added a slightly salty flavour
    Also used cooked beetroot which worked fine too 🙂
