Roasted Carrots with Herby Sauce

Instructions

  1. Preheat the oven to 200°C./400°F. Arrange the carrots on a large baking tray. Drizzle 1/2 cup of the olive oil over the top, and sprinkle with 1 teaspoon of the salt. Use your hands to roll the carrots around the pan, making sure they’re well coated.

  2. Place in the oven to roast for about 30 minutes. The carrots should be tender and slightly caramelized.

  3. While the carrots roast, make the herby sauce. In a food processor, combine the remaining 1/2 cup of olive oil, parsley, lemon zest, garlic, and remaining salt, and blend together.

  4. Once the carrots are finished roasting, arrange them on a platter and spoon the herby sauce over them. Sprinkle with crumbled feta and pistachios.

    Crumble any large pieces of feta into smaller ones

Note

The herby sauce might seem not enough to go around, but you only need a small drizzle over the top.

    Very tasty but we found these quite oily. The oil dripped off the serving board when on the table

    please clarify exactly how much oil is supposed to go in the herby sauce

      Recipe calls for 1 cup (250ml) olive oil and you use half to roast the carrots and the remaining half cup (125ml) in the herby sauce.

    In the directions, (step #3) it says to mix dill with other ingredients to make the herby sauce, however dill is not in the list of ingredients. Parsley is in the ingredients though, which one are you supposed to use?

      Sorry, this has now been corrected. The herby sauce uses parsley not dill.
