Minty Pea Hummus

Place peas and spinach in two heatproof bowls. Pour over boiling water to cover and leave for a couple of minutes. Drain both, then place spinach on a clean tea towel and roll up to squeeze out excess moisture. Chop roughly.

Put the peas and spinach in a food processer with all remaining ingredients and blitz until well combined. You can serve this as chunky or as smooth as you like. Season well.

To serve, spread hummus in serving bowl, and top with a swirl of yoghurt and a little olive oil. Season and sprinkle with seeds. Serve with crackers and fresh vegetables.

Always popular! Really fresh and light. I use a scoop or two of cream cheese instead of the avocado, that way you can make it ahead without it browning.
Lovely fresh dip! I didn’t have spinach so added chickpeas. Went down extremely well with the guests 🙂
In my opinion it wasnt like a hummus. More like a pea & spinach mash. Makes a huge batch and didnt have much flavour. Wont be making it again.
