Mediterranean Honeyed Feta Spread

Preheat the oven to 200°C/400°F.

Line a baking tray with baking paper and place the feta cheese on the tray. Brush the top with olive oil. Warm the feta in the oven for about 10 minutes until it softens.

Remove the feta and blot any excess liquid with a paper towel. Switch the oven to the grill setting.

Make small holes in the top of the feta with a skewer, sprinkle with 1/4 teaspoon of chilli flakes, and drizzle with two tablespoons of honey. Grill the feta for approximately 5 minutes, watching carefully for a golden, caramelised top.

Transfer the feta to a serving dish, mash gently to a spreadable consistency, and add the remaining honey, chilli flakes and thyme.

Slice the ciabatta, brush with olive oil, and grill until toasted. Spread the warm feta onto the ciabatta slices to serve.
