Green Pasta with Manuka Honey Split Chicken

Instructions

  1. For the chicken, preheat oven to 200°C/400°F. Line baking trays with baking paper and place the chicken on the lined trays. Combine the honey, oil, chilli flakes, parsley and mustard in a small bowl.  Evenly coat chicken with the marinade and season generously. Cook for 45 minutes or until the chicken has reached 75°C/170°F.

  2. For the green sauce, place all ingredients in a blender and blend until smooth.

  3. For the pasta, in a separate oven, preheat the grill. Line a baking tray with baking paper and place haloumi and oregano on tray, drizzle with 1 tablespoon olive oil. Grill until crisp and golden, about 8 minutes, stirring occasionally, set aside.

  4. Cook the spaghetti in salted water until al dente, about 3 minutes, drain and place in a large mixing bowl. Add zucchini, spinach leaves, green sauce and drizzle approximately 1 tablespoon olive oil in to help combine, seasoning well. Place pasta in serving dish and top with grilled haloumi.

  5. Carve chicken and add to the side of the dish or serve separately. Serve with a pot of Greek yoghurt on the side.

Note

*Any honey can be used. However, manuka is less sweet and richer in flavour which works well with chicken.

Leftovers are delicious the next day as flavours have matured.
