The global authority on colour trends, The Pantone Colour Institute, has chosen Ultra Violet as the colour of 2018, so now seems the ideal time to pay homage to the virtues of purple foods and the strong role the plant kingdom plays in embracing this bright & beautiful trend.
While we see the worlds of art, design & accessories living and breathing more Violet this year throughout the Campus Trading stores globally, from striking violet to beautiful blue-purple, the power of this shade goes beyond just its vibrant colour and indicates nutrient density & high antioxidants in the food world.

Purple foods are packed with health promoting chemicals called anthocyanins (an-tho-sigh-a-nins)that assist in protecting cells and healing within the body. Research also suggests they play a role in promoting eye and heart health, and decreasing cancer cell proliferation amongst many other benefits. Its these anthocyanins that give purple foods their rich and royal hue.
If that’s not enough to get you chowing down vibrant violets, then we invite you to check out a few recipes below made from ingredients sourced through Campus Trading stores.
Taro Tiger Bread

Taro Tiger Bread, made from purple taro juice (can also be made with FRESHAS dried beet powder as a colourant, fresh beet juice, purple potato juice, or blueberry juice).
Simply divide one batch of Laucke Super Soft Bread Mix Dough into two portions.
Leave one ball of dough plain.
Divide remaining ball into 3 portions.
Mix a little of the heavily pigmented natural fruit or vegetable powder or juice through your three portions in three grades: one with a tiny amount for a pale stain to the dough, 2nd with a little more, and to the third ball of dough add the highest qty for a darker dough.’
Cut each coloured dough ball into three.
Roll the coloured dough pieces into long ‘snake’ like shapes.
Divide the plain dough into nine pieces.
Flatten and roll with rolling pin to create sections big enough to wrap entirely around each ‘snake’ of coloured dough.
Wrap plain dough around, to completely seal coloured piece inside.
Group all pieces together, fold ends under, and place in prepared loaf tin.
Allow to rise and bake as per Laucke instructions.

We served our Taro Tiger bread with mini pots of honey. Makes a stunning breakfast for someone special, served with a taro latte or herbal teal.
Purple Pannacotta

Simply add FRESHAS raspberry, blueberry or plum powders to your favorite pannacotta or mousse type recipe, chill, turn out and serve. A very simple but effective way to add some pretty purple to your plating, and up that antioxidant level.’
For added health benefit, opt to make your pannacotta dairy free using coconut cream, and add pureed fresh organic blueberries.
Switch up the refined sugar to coconut sugar, and you have a lower GI, vibrant violet dessert that is packing a purple health punch.

Purple Smoothies
Add purple to your smoothies or juices by adding purple kale, blueberries, beet juice, or similar is a quick and easy way to get your 5+ a day level up, and rev up your daily intake of resveratrol, bio flavonoids & vitamin C.

Purple Plating Splash
Make your fave garnishing sauce – be it coconut cream custard or a classic sabayon. Add some purple fruit or vegetable juice, and place one spoonful on a plate. Tap the back of the same spoon down firmly in the centre of the sauce to splatter it and create a pretty graffiti backdrop for your plating. Who knew art could taste so good?
