Freezer-Friendly Foods: Saving Leftovers from Your Fridge

1. Eggs -To freeze, separate white and yolk, add a little salt to the yolks and give a little stir before freezing. Ice cube trays are ideal for freezing eggs.
2. Milk
3. Bread
4. Cream
5. Cheese
6. Yoghurt
7. Butter
8. Fresh fruit or berries can be laid out on baking paper on a tray. Place in sealed zip bags when frozen, for use in jams, ice-creams, sorbets, smoothies etc..
9. Potato, kumara, butternut and carrots can be parboiled and frozen for future use. Cook from frozen.
10. Beans, broccoli, cauliflower and corn cobs. These can be blanched, laid out on a tray and frozen. Cook from frozen.
11. Freeze whole tomatoes that have gone soft. When you have a few accumulated, use them in sauces for pasta, relish etc.
12. Peeled, sliced bananas can be frozen for use in desserts or milkshakes and smoothies.
13. Zucchini – slice, shred or grate excess zucchinis. These can be used in zucchini slice or tarts.
14. Nuts – store nuts in sealed and labelled bags in the freezer.
15. Peel and gently simmer apples for later use, in desserts etc.
16. Precooked rice can be very successfully frozen.
17. Prepare potatoes for various uses, by cutting them as wedges, chips, cubes, roasties, and then parboiling them in salt water. Open freeze on trays before storing them in airtight bags.
18. Store any leftover vegetables, cooked or uncooked, in separate zip lock bags. These are great for soups and baby food.
19. Store leftover pieces of cheese in an airtight bag. These can be used in pastries, sauces, savoury biscuits, tarts etc
20. Store stale sweet biscuits in airtight bags. These can be used for tart bases.
21. Store savoury biscuits in airtight bags. These can be crushed and used as tart bases, or as a ‘coating’ for chicken etc
22. Avocadoes can be frozen halved and peeled. Mix with lemon juice before freezing. These can be used in sauces or dips.
23. Chop those excess herbs up finely and place in ice cube trays. These are perfect to add to casseroles, stews, sauces etc
24. Juice from lemon crop can be frozen in ice cube trays. Frozen cubes can be stored in freezer bags.
