We all know that someone who can entertain at the drop of a hat – that someone who is never caught off guard, but calmly pulls something out of the freezer at the last minute and doesn’t ever look flustered. For the rest of us not endowed with such presence of mind, or with less well-stocked freezers, we are left wondering why we can’t be that kind of efficient!
When you think about it, unplanned guests are not uncommon in our busy lives. A change of plans, the unexpected drop-in callers, the sudden need for something on the table immediately. But although we know it happens, the challenge remains; how to produce a seemingly effortless tasty meal or snack without appearing to panic!
But it is achievable, and with the help of a few standby recipes and some tricks and tips, you too can host last-minute visitors without dialling up the pizza shop.
For starters, make your company feel at home right away by giving them something to munch on as quickly as possible. Try a quick batch of caramelised nuts, ready to serve fresh and warm by the time a few drinks are poured. While they are distracted with your tasty homemade nibblies, you can sort out your game plan behind the scenes.
For something more substantial, learn to use what you have to hand. Even scraps can be a perfect foundation for an eleventh-hour repast. Roast vegetables are ideal for adding to an omelette or frittata. Beat up some eggs, throw in some cheese and whatever vegetables you have spare and’voila‘- a no-stress meal that also helped clear out your fridge! A few other pantry staples can make impromptu catering much less onerous, so keep a stock of these to hand. A box of instant rice can be speedily heated and combined with sautéed vegetables and meat for a savoury stir-fry in no time. Canned meats such as tuna, salmon or chicken are another fast way to add some protein. Just add to tacos, wraps or salad for some fresh, light and quick options. Couscous is another fantastic mainstay as it only takes a minute or two to cook, it’s versatile and, what’s more, it’s filling. Once again, don’t disregard your leftovers but add them to a base of couscous, toss in some slivered almonds and baby spinach, and you’ll have your guests asking for the recipe!
Sometimes dessert can be the most daunting part of the meal, and all of us know the feeling when we discover that it hasn’t set properly, it’s still frozen solid, or it’s a crumbled mess that you can’t even dish.
Never fear! A bag of frozen fruit, a can of coconut milk, a splash of honey, and you’ll be dishing up the most amazingly refreshing ice cream. Top with a sprig of fresh mint, and you’ve got a gourmet treat, second to none!
