Cook’s Tip: Do you like to convert your favourite sweet treats to gluten-free? Then you know how often baking can fall apart and crumble if you simply swap out the flour. Give this a go next time you’re baking: Swap out wheat flour for gluten-free flour, add an extra egg, and â…“ teaspoon of xanthan gum (or guar gum can be used as a substitute). The gum acts as a binding agent to stabilize the mixture, mimicking the texture of gluten, and the extra egg ensures that nothing is left to chance.
