These are homemade crackers with a sweet and spicy twist, featuring dried figs, almonds and an aromatic blend of spices.

Spiced Fig & Almond Crackers

Instructions

  1. Preheat oven to 180°C/350°F. Grease and line a small loaf tin with baking paper.

    FOR THE TM: Weigh the figs and almonds into the bowl together. Chop for 5 sec/speed 6. Scrape out into a small bowl and set aside.
  2. Whisk together milk, brown sugar and yoghurt in a bowl.

    FOR THE TM: Without cleaning the bowl, weigh the milk, brown sugar and yoghurt into the Thermomix and mix for 30 sec/speed 4 to combine.
  3. In a separate bowl, mix flours, dried figs and almonds, separating any clumps of fruit. Add rolled oats and all spices to the flour and fruit mixture. Stir in the milk mixture until it forms a thick batter.

    FOR THE TM: Weigh into the bowl the flours, rolled oats, spices and the chopped figs/almonds that were set aside earlier and mix with spatula until a thick batter forms.
  4. Pour into the loaf tin and bake for 25 minutes or until a skewer comes out clean.

  5. Cool the loaf, then freeze. Partially thaw before slicing thinly.

  6. Preheat the oven to 120°C/250°F. Bake the slices for 50 minutes or until crisp.

Note

The batter should be thick like muffin batter before baking.

Freezing the loaf before slicing makes it easier to get thin, even crackers.

The crackers will crisp up as they cool after baking.

Substitute plain and whole wheat flours with gluten-free flour blend to make this recipe gluten free.

    Delicious crackers!
    TIP – instead of cooking the crackers in the oven, it’s quicker to do them in the air fryer @120ËšC/250ËšF for about 20 minutes.
