To make the garlic butter, combine butter, garlic, parmesan, herbs, and salt together in a small bowl.

Transfer the dough to a work surface and cut into 8 equal pieces. Working with 1 dough piece at a time, roll into a large rectangle, approximately 25x35cm/10x13” on a lightly floured surface.

Spread some of the garlic butter over the dough, then cut lengthwise into 3 strips. Cut the strips crosswise into 4 strips each, making 12 squares and stack all 12 dough squares, 1 on top of the other.

Repeat with remaining dough pieces and remaining garlic butter. Arrange stacks in a lightly greased 24cm/9.4” ring tin, standing up like little books, allowing small gaps between dough pieces.

Let dough a rise in a warm place until the doubled in size, approximately 30 minutes. Preheat oven to 180°C/350°F.

Transfer to the oven and bake until the bread is golden brown, 25-30 minutes. Let stand in the pan 5 minutes, then carefully remove. Brush with additional melted butter, and sprinkle with flaky sea salt to serve.

A little bit fiddly to make but goes over well. Easier to just roll out several big rectangles and spread mixture over each one and stack them on top of each other and cut all at once. It doesnt have to all be lined up perfectly as that is part of the effect. Also, be sure to leave in the pan till its cooled abit and take out carefully so it doesnt fall apart.
This is delicious and compliments most Lordsday joints. Have made this on several occasions and hasn’t failed to impress.
A little too strong of herb and garlic but was nice, and was easy to do.
This is easier than you think and looks impressive – yum! A slightly quicker way if in a hurry could be to divide into 12 pieces and roll each piece out to a rectangle (slightly smaller, approx 35×16) and then lay each whole layer on top of each other with the filling in between. You can then divide it all into 8 sections at once.
If freezing it , how do you recommend to warm it up? I did it just in the warming drawer and added no extra butter and it seemed quite dry so I’d like to know if I try it again. Thanks

Much easier than anticipated and very forgiving (doesn’t have to be perfect sized squares for it to still look good!) Tore apart really well. I made 2 slightly smaller rings. Will make again.

We hate garlic. Has anyone tried melted butter and grated cheese instead? Or any other alternatives?
You can just skip the garlic altogether and use rosemary or another seasoning instead. Melted butter with cheese will also work —mix up the cheeses if you like. Or try spreading pesto or sun-dried tomato paste on the dough before adding the butter mixture. Hope that helps!
