If you are needing a finishing touch on your stack but forgot to buy microgreens, very thinly slice the green part of a spring onion into strips and place in a jug with cold water and ice blocks in the fridge. Leave for at least an hour and when you come to use them they’ll be curly…tip the water off and there’s your garnish!
