Stuffed Picnic Cob Loaf

This is one of the best examples of a take-out lunch – the work can all be done at home the night before and it makes for a stress-free day!

Here are some tips to make your layered loaf work best:

  1. Don’t make the walls of your loaf too thin.
  2. Rubbing a cut garlic clove over the inside of the loaf before filling gives it extra flavour!
  3. Keep your fillings reasonably dry. For example, remove the seeds from tomatoes and blot grilled capsicum/pepper dry before adding.
  4. Once you have replaced the bread lid, wrap the whole thing tightly in plastic wrap. Put a plate on top and weigh down with something heavy to let the flavours fuse together for at least 2 hours, preferably overnight.

 

There are so many varieties of fillings that can be used:

Cream cheese, Havarti cheese, Grated cheddar/tasty cheese

Tomatoes, Cucumber, Spinach, Mini stuffed bell peppers

Red pepper hummus

Shaved turkey, Ham, Thinly sliced beef, Salami

Grilled capsicum/pepper, Grilled mushrooms

Basil or Basil pesto
