Savour the Great Outdoors – Summer Edition – Outdoor Lunch with Aperol Vibes

The sun-kissed evenings of summer are the perfect backdrop for a gathering of family and friends to enjoy a fresh Aperol-vibed evening feast.

The inspiration for the theme is based around the classic Aperol spritz – a popular and refreshing cocktail perfectly suited to warmer weather. This bright bittersweet drink is sure to add a touch of Italian flair to your gathering!

To set the scene, choose platters and decorations that are citrus coloured, white and bright. Include vases of lemons and oranges, pineapples, wicker and raffia decorations, bright coloured paper napkins, and use interesting food tins as extra decorations, the contents can be used later!

The Aperol Spritz Cocktail

Ricotta Spread with Sundried Tomatoes & Pine Nuts Use the ricotta spread from this recipe, smooth it onto a platter and top with Spícy Red Pesto and Maple Thyme Cherry Tomatoes and some fresh basil.

Marinated Olives served on ice.

Dried orange or citrus slices, to add to your drink!

Snacking tray with deli meats, fresh herbs and edible flowers, fresh figs, fresh apricots, fresh capsicum/pepper, store-bought crackers, selection of cheeses, Spicy Red Pesto, Apple Cider Lavosh, Sticky Roast Tomato Pepper Relish, marinated artichokes, avocado, Spinach Dip, dried apricots.

Mosaic Melon Feta Salad or Watermelon Feta Skewers laid out in a checkerboard pattern.

A mixed hummus bowl using four different flavoured hummus – Homemade Hummus, Creamy Beetroot  Hummus, Spinach, Feta & Dill Hummus with Grissini, Harissa Hummus and sprinkled with roasted pine nuts, served alongside a plate of fresh veggies to dip.

Store-bought savoury cones served with a whipped cheese – use any of these recipes: – Whipped Feta with Sundried Tomato Vinaigrette, Chilli Whipped Brie, Whipped Goat’s Cheese with Salmon Antipasto . Add a bowl of mixed chopped roast nuts, and some local honey. The idea is to fill your savoury cone with whipped cheese, add some honey and then dip it into the nuts.

 

This is a stunning spread for a special occasion, and not for the faint-hearted! Remember always when heading out in summer, to take everything on ice or in ice boxes, and take care to make sure food is kept safe for eating.
