Tips to plate your main meal

A well-balanced plated meal is built around a few simple elements:
Protein (meat or seafood), a base (purée, mash, grain, starch, or vegetables), optional cooked vegetables, sauces (oil-based, mayo-based, gravy-style), and garnishes.

Mix and match components based on what you have on hand, what’s in season, or what’s on special.

Plating Tips:

Plan your design:

Take a moment to visualise how the dish will look on the plate – use a quick sketch or a reference photo if you like. Keep things simple and avoid overcrowding; a little negative space helps each ingredient stand out and gives the plate a clear focal point. Sauces or purées often look best when they contrast with the plate colour, and a mix of colour and texture keeps the dish visually interesting. Adding a bit of height – through gentle stacking or a light garnish – can bring dimension without effort. Finally, make sure the layout is practical for serving larger numbers and holds its shape right up until it is eaten.

Plan portions: Measuring components ahead of time – or using spoons or cups as a loose guide when plating (for example, a tablespoon of jus or around 1/4 cup of purée) – can help keep plates looking consistent and reduce the chance of running short. Use this as a guide rather than a rule and adjust as needed. Brief your helpers on portion sizes before you begin. Make sure you have enough of the sauce and purée – you go through more than you think!

Warm your plates: If possible, place plates in a low oven for 30 minutes to 1 hour before plating. Warm plates help keep food hot once served.

Enlist helpers: Make sure you have enough hands to plate efficiently and get meals to the table promptly. Around 3–5 people works well, depending on the complexity of the dish.

Use the right equipment: Squeeze or sauce bottles are worth having for homemade sauces – they allow for neater, more consistent plating. Select the right size spoons or measuring cups for each component.

Make the most of your Thermomix: Use it to keep purées hot, smooth, and ready to serve right up until plating. 

Prep everything first: Have all elements ready before you start – meat sliced (or being sliced), components cooked and warm, and garnishes prepped and within reach. When you begin plating, make up one full plate first so your helpers have something they can copy for design and portion sizes.

Choose your plating method: There are a few plating approaches that work well, depending on the dish and meal style.

Assembly Line Method:
Set up all plate components on the counter in the order they’ll be added. Assign each helper responsibility for one or two elements. One person begins each plate with the first component, then passes it down the line as each element is added until the dish is complete. Repeat until all plates are finished. This is the most efficient method and helps keep food fresh but works best with enough helpers. Clean any accidental spills on the plate if needed.  

Laid-Out Plating Method:
Arrange all plates on the counter and add the first component to every plate before moving on to the next. Alternatively, have a second person follow behind to add the next element. This method takes slightly longer but is ideal with fewer helpers and allows for consistency across plates – also ideal for photographing finished plates.

On the side: Extra dishes – such as salads, potatoes, or bread – can be placed on the table or passed around. Keeping the main plate a little lighter and offering sides separately allows guests to help themselves and eat as much as they’d like. If you have extra meat, feel free to pass around seconds as well.
