Something to grab on the run… A must to have in the freezer for the overnight visitor. Also excellent for school lunches.

Instructions

  1. For the scrambled eggs, beat all the ingredients together until well mixed.

  2. Spray a frying pan with cooking spray and place on high heat. Spray 6 egg rings and sit inside frying pan. Pour egg mixture into egg rings, cover pan with a lid and reduce the heat to medium. Cook for about 10 minutes or until mixture is firm.

  3. To assemble muffins, spray 6 squares of foil with cooking spray.

  4. Cut the muffins in half and spread both sides with butter. Place a muffin half onto each square of foil and spread with relish. Layer with bacon, egg and cheese then top with the lid of the muffin. Wrap the muffin up inside the foil and freeze.   

  5. Allow to thaw before cooking and cook in a preheated oven at 180°C/350°F for 30 minutes. Serve immediately.

Note

Freeze muffins uncooked – no need to cook before freezing.

Add 1 tsp curry powder to scrambled egg mixture, if desired.

    Very yummy! I had a little difficulty with cooking the eggs, the pan has to be hot enough to start otherwise the egg runs everywhere when you pour into the egg rings. Next time I would start it quite hot then turn it down really low once the egg has set enough, as mine came out very burnt on the bottom. Managed to scrape/peel off the burnt bits and they went down a treat for a quick Saturday morning breakfast with family visiting.

    Quick and easy to make 4 school lunches and freeze. Very tasty! I dont have any egg rings so cooked the whole mixture in a dish in the oven, took twice as long to cook but still perfectly fine and fluffy. Then cut into 6 once cooled and put in muffins b4 freezing.

    Loved these muffins! Really tasty and super handy being in the freezer so you can pull them out for breakfast on the BBQ while on your holiday day trips. Easy, convenient and a great way to fuel the day! Will definitely be keeping these in my freezer

    Very easy and quick recipe, surely a must have in any freezer ! I’d recommend however to moderate the cooking of the eggs to a low fire, I’ve had mine start to brown too soon. Thank you for another great recipe !
