Cheesecake
It is the classic of the centuries; cheesecake has been delighting both chefs and epicureans for generations.
Originating in Ancient Greece, it was served as an energy boost to the original Olympic athletes of Athens. Still very much on the winning podium, cheesecake has risen to new heights as a favourite in every arena, from the sidewalk Bistros in Paris to the trendy Cafés of New York City.
The four basic types of cheesecake are differentiated by the kind of cheese used.
The Italian cheesecake uses a curd cheese, like ricotta. The creamy quark cheese is what distinguishes the delightful German cheesecake, whilst French cheesecake boasts a chiffon-like style, often including whipped gelatin for a feather-light feel. And of course, the rich classic New York Style cheesecake showcases cream cheese and lots of it!
This popular American version was created in 1929 by Arnold Reuben, a German-Jewish immigrant. He tinkered with a traditional European recipe and added the cream cheese that is so popular today. In 1949, the cheesecake evolved again, to include the signature thickened strawberry topping that has made it one of the most recognisable desserts anywhere.
By the 1980s, it had become such an essential part of American culture that National Cheesecake Day was initiated and is celebrated every July 30.
Now a beloved family favourite, the varieties of cheesecake are limited only by a cook’s imagination. From Dulce de Leche and luscious fruit toppings to the efficient no-bake version, there’s a cheesecake for every skill level.
Far from honouring this mouth-watering delight only once a year though, we feel that every day can be Cheesecake Day!
