Give your Baking Sheet a Breather

 

 

Have you ever had one batch of biscuits turn out perfect, only to have the following ones go flat? Chances are, your baking sheet just needs to cool off!

We all know the scenario. . . . perfect biscuits come out of the oven, get lifted onto a cooling rack. . . and we’re in a hurry to get the next batch cooking. So, onto the hot baking sheet they go! The problem is, the butter contained in the dough immediately starts to soften and melt, resulting in the inevitable flat biscuits!

Take the extra minute or two to properly cool your baking sheet before adding the next batch of dough. Balance over the sink, or rinse with cool water and dry. The result? Perfect biscuits every time!
