Biscoff & Cherry Ice cream

Homemade Biscoff spread

Instructions

  1. To make Biscoff spread, blend Biscoff biscuits in Thermomix for 5 seconds at Speed 5. Add condensed milk, brown sugar and milk and blend at Speed 5 for 20 seconds, slowly increasing to Speed 8 for a creamy consistency. Store in jar in fridge.

  2. Microwave Biscoff spread for 30 seconds at a time until pourable.

  3. Place the ice cream in a large bowl and mix with a wooden spoon until softened.

  4. Spread a layer of ice cream in the base of a freezer safe container. Drizzle with the melted Biscoff spread. Sprinkle with cherries and crushed biscuits and repeat until all ingredients have been used.

  5. Return to the freezer until ready to serve.

Note

Speculoos or ginger snaps can be used instead of Biscoff cookies.

  1. Could i just double check the qty of milk in this Homemade Biscoff Spread!
    I have made double qtys and have a large jug of very runny slightly thick milk, certainly not something you would melt in the microwave to make it pourable… or is it going to go hard in the fridge? Hasn’t as yet 😶
