Put noodles & water in a bowl. Break up noodles & leave for 3 mins.
Cut chicken into thin strips. Toss in cornflour. Heat oil in frypan, add chicken & stir-fry over high heat for 2 mins or until lightly browned. Add ginger & garlic, stir-fry for 1 minute. Add vegetables, soy sauce & curry powder. Stir-fry for 3 mins or until tender.
Drain noodles & add to pan with vegetables & chicken, stir-fry until heated through.
